Step preview

  1. Pre-heat oven - 180°C
  2. Sterilize a clean jar
  3. Line a clean cupcake pan
  4. Attach the K-Beater
  5. Add unsalted butter, caster sugar, egg, self raising flour and lemon to the Cooking Chef XL Bowl
  6. Lift the Cooking Chef head and fit the heat shield
  7. Mix with splashguard fitted - 10 sec, Speed 1
  8. Mix with splashguard fitted - 50 sec, Speed 4
  9. Transfer batter to cupcake pan
  10. Bake - 20 min, 180°C
  11. Let cool on round wire rack
  12. Clean Cooking Chef bowl
  13. Attach the Creaming Beater
  14. Add caster sugar, lemon, unsalted butter and egg yolk to the Cooking Chef XL Bowl
  15. Cook with splashguard fitted - 5 min, 60°C, Stir 1
  16. Cook with splashguard fitted - 10 min, 85°C, Stir 1
  17. Cook with splashguard fitted - 10 min, 95°C, Stir 1
  18. Transfer content of Cooking Chef XL Bowl to jar
  19. Let cool
  20. Chill in fridge until just set
  21. Use a small knife to cut a small, deep circle into the centre of each cupcake
  22. Spoon half a teaspoon of the lemon curd into each cupcake
  23. Clean Cooking Chef bowl
  24. Attach the Whisk
  25. Add egg white, caster sugar and cornflour to the Cooking Chef XL Bowl
  26. Cook with splashguard fitted - 2 min, 85°C, Speed 6
  27. Cook with splashguard fitted - 2 min, 65°C, Speed 6
  28. Transfer meringue to piping bag
  29. Pipe meringue onto cupcakes
  30. Brown off the top of the cupcakes using a chef’s blowtorch or a low setting on your grill
  31. Serve
