This combination of carrot, orange and cardamom has a delicious aroma whilst baking and the flavour is subtle and not too sweet. They are topped with a smooth and creamy cream cheese frosting.

Step preview

  1. Pre-heat oven - 170°C
  2. Line a clean muffin pan with paper muffin cups then set aside
  3. Attach Creaming beater
  4. Add carrot, apple, dark brown sugar, vegetable oil, orange juice, egg, orange and vanilla extract to the EasyWarm Bowl
  5. Mix - approx 30 sec, Speed 1
  6. Then add all purpose flour, spelt flour, raisins, baking powder, baking soda, ground cinnamon, ground cardamom and salt to the EasyWarm Bowl
  7. Mix - approx 30 sec, Speed 3
  8. Spoon content of EasyWarm Bowl into muffin pan
  9. Bake - 20 min, 170°C
  10. Remove from oven and let cool
  11. Clean EasyWarm Bowl
  12. Attach Creaming beater
  13. Add unsalted butter to the EasyWarm Bowl
  14. Mix - approx 20 sec, Speed 2
  15. Then add icing sugar, cream cheese, vanilla extract, orange juice and orange to the EasyWarm Bowl
  16. Mix then scrape bowl - approx 20 sec, Speed 2
  17. Mix until combined - approx 10 sec, Speed 2
  18. Use a palette knife to add the frosting to the top of the muffins
  19. Sprinkle with pistachios and orange zest
  20. Serve
