This peanut butter cookie recipe is gluten free and only has four ingredients so making it when you have a cookie craving should be easy. They require 30 minutes freezing time before baking, this is to help form the cookie shape as it is a very soft dough. Adding a sprinkle of coarse sea salt to the cookies before baking is recommended but entirely optional.

Step preview

  1. Line a clean baking sheet with parchment paper then set aside
  2. Attach Creaming beater
  3. Add light brown sugar, egg and vanilla extract to the EasyWarm Bowl
  4. Mix until combined - approx 2 min, Speed 3
  5. Then add smooth peanut butter to the EasyWarm Bowl
  6. Mix until combined - approx 2 min, Speed 3
  7. Spoon mixture onto baking sheet
  8. Freeze - 30 min
  9. Pre-heat oven - 170°C
  10. Remove the trays from the freezer
  11. Bake - 16 min, 170°C
  12. Let cool slightly
  13. Serve
