Step preview

  1. Pre-heat oven - 160°C
  2. Grease a clean springform pan
  3. Add caster sugar to the springform pan
  4. Coat the pan with the sugar and tip out the excess
  5. Attach the Creaming Beater
  6. Add dark chocolate, butter and brandy to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Cook with splashguard fitted - 10 min, 60°C, Stir 1
  9. Transfer chocolate mixture to large glass bowl
  10. Clean Cooking Chef bowl
  11. Attach the Whisk
  12. Add egg yolk and caster sugar to the Cooking Chef XL Bowl
  13. Mix with splashguard fitted - 4 min, Speed Max
  14. Transfer egg mixture to large glass bowl
  15. Add ground almonds to the large glass bowl
  16. Mix until combined then set aside
  17. Clean Cooking Chef bowl
  18. Attach the Whisk
  19. Add egg white to the Cooking Chef XL Bowl
  20. Mix with splashguard fitted - 1 min, Speed Max
  21. Add 1 tablespoon of the whisked egg whites into the large glass bowl
  22. Fold gently until combined
  23. Transfer the rest of egg whites to large glass bowl
  24. Mix carefully until combined
  25. Transfer batter to springform pan
  26. Spread until level
  27. Add pear to the springform pan
  28. Bake - 20 min, 160°C
  29. Add flaked almonds to the springform pan
  30. Bake - 20 min, 160°C
  31. Let cool
  32. Turn out
  33. Serve
  34. Sprinkle with icing sugar
