Step preview

  1. Line a clean square pan with plastic wrap
  2. Attach the Stir Tool and Whisk
  3. Add caster sugar, egg white, water, passion fruit and mango purée and yellow food coloring to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted - 6 min, 85°C, Speed 6
  6. Mix with splashguard fitted - 2 min, Speed 6
  7. Then add silver leaf gelatin sheet to the Cooking Chef XL Bowl
  8. Mix with splashguard fitted - 5 min, Speed 6
  9. Transfer content of Cooking Chef XL Bowl to square pan
  10. Spread until level
  11. Add passion fruit coulis to the square pan
  12. Swirl
  13. Top with a piece of parchment paper
  14. Let cool - approx 3 hr
  15. Add cornflour and icing sugar to a clean medium bowl
  16. Mix until combined
  17. Lightly dust the cutting board with a little of the cornflour and icing sugar mixture
  18. Carefully remove the parchment paper from the marshmallow
  19. Turn out content of square pan onto cutting board
  20. Carefully remove the plastic wrap from the marshmallow
  21. Lightly dust the marshmallow with some of the cornflour mixture
  22. Cut into squares
  23. Transfer content of cutting board to medium bowl bit by bit
  24. Mix until coated
  25. Shake off the excess powder from the marshmallows
  26. Serve
