Step preview

  1. Pre-heat oven - 180°C
  2. Grease and line a clean rectangular pan with parchment paper
  3. Fit max blade to kCook bowl
  4. Add unsalted butter, golden caster sugar, egg, all purpose flour, baking powder and vanilla extract to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl with filler cap fitted
  7. Mix with filler cap fitted - 2 min, speed 10
  8. Transfer batter to rectangular pan
  9. Bake - 25 min, 180°C
  10. Remove from oven and let cool
  11. Add milk and cornflour to a clean jug
  12. Mix until dissolved
  13. Clean kCook bowl
  14. Fit stir tool to kCook bowl
  15. Add egg yolk and caster sugar to the kCook bowl
  16. Fit kCook bowl to kCook Multi
  17. Attach lid to kCook bowl
  18. Mix with filler cap removed - 2 min 30 sec, speed 5
  19. Transfer milk mixture to kCook bowl while machine is running
  20. Cook with filler cap removed - 7 min, 85°C, speed 4
  21. Transfer custard to heatproof bowl and let cool
  22. Clean kCook bowl
  23. Fit whisk tool to kCook bowl
  24. Add blackberry puree and mulled wine to the kCook bowl
  25. Fit kCook bowl to kCook Multi
  26. Attach lid to kCook bowl
  27. Cook with filler cap removed - 5 min, 94°C, speed 3
  28. Then add silver leaf gelatin sheet to the kCook bowl
  29. Mix with filler cap removed - 1 min, speed 8
  30. Pour jelly into jug then set aside
  31. Clean kCook bowl
  32. Fit whisk tool to kCook bowl
  33. Add whipping cream, vanilla extract and icing sugar to the kCook bowl
  34. Fit kCook bowl to kCook Multi
  35. Attach lid to kCook bowl
  36. Whisk with filler cap removed - 1 min 40 sec, speed 7
  37. Chill in fridge
  38. Transfer sponge to cutting board
  39. Cut into rounds
  40. Transfer sponge to 4 drinking glasses
  41. Transfer jelly to 4 drinking glasses
  42. Chill in fridge until set - approx 2 hr
  43. Spoon custard into 4 drinking glasses
  44. Chill in fridge - approx 1 hr
  45. Spoon cream into 4 drinking glasses
  46. Spread until level
  47. Decorate with blackberries
  48. Serve
