This is a traditional French recipe for a galette which is eaten normally on the 6th January for the Epiphany. A "fève" is hidden in the cake and the person who finds it in their slice is king or queen for the day. We have made a smaller one here but there is plenty of pastry and frangipane to make a slightly bigger one.

Step preview

  1. Line a clean baking sheet with parchment paper
  2. Fit midi blade to kCook bowl
  3. Add all purpose flour, salt and water to the kCook bowl
  4. Fit kCook bowl to kCook Multi
  5. Attach lid to kCook bowl with filler cap fitted
  6. Mix with filler cap fitted - 30 sec, speed 8
  7. Then add butter to the kCook bowl
  8. Mix with filler cap fitted - 30 sec, speed 8
  9. Place pastry on work surface and bring together
  10. Wrap with plastic wrap
  11. Chill in fridge - 30 min
  12. Pre-heat oven - 180°C
  13. Clean kCook bowl
  14. Fit max blade to kCook bowl
  15. Add butter, vanilla extract and caster sugar to the kCook bowl
  16. Fit kCook bowl to kCook Multi
  17. Attach lid to kCook bowl
  18. Mix with filler cap removed - 2 min, speed 7
  19. Add egg to the kCook bowl while machine is running
  20. Mix with filler cap removed - 5 min, speed 7
  21. Then add ground almonds, rum and almond extract to the kCook bowl
  22. Mix with filler cap removed - 4 min, speed 6
  23. Transfer filling to piping bag
  24. Transfer pastry to lightly floured surface
  25. Roll out until 1/8" (5mm) thick
  26. Cut the pastry into two 15 cm (6“) circles
  27. Transfer pastry to baking sheet
  28. Pipe a spiral of filling onto one of the pastry circles leaving a 2 cm gap around the edge
  29. Brush with water
  30. Place the other pastry circle on top and press down to seal
  31. Crimp the edges making sure no air is trapped in the pastry
  32. Carefully score the top of the pastry with a sharp knife
  33. Brush with egg
  34. Bake - 25 min, 180°C
  35. Serve
