A twist on a classic lemon shortbread. You can flavour the water icing as well by replacing some of the water with lemon juice or elderflower cordial.

Step preview

  1. Line a clean baking sheet with parchment paper
  2. Fit max blade to kCook bowl
  3. Add unsalted butter and caster sugar to the kCook bowl
  4. Fit kCook bowl to kCook Multi
  5. Attach lid to kCook bowl with filler cap fitted
  6. Mix with filler cap fitted - 30 sec, speed 10
  7. Then add all purpose flour, cornflour, lemon and lemon juice to the kCook bowl
  8. Mix with filler cap fitted - 30 sec, speed 10
  9. Transfer dough to work surface
  10. Wrap with plastic wrap
  11. Chill in fridge - 30 min
  12. Pre-heat oven - 180°C
  13. Place dough on lightly floured surface
  14. Roll out until 1/8" (5mm) thick
  15. Cut the dough into even rectangles
  16. Transfer biscuits to baking sheet
  17. Bake - 12 min, 180°C
  18. Clean kCook bowl
  19. Fit max blade to kCook bowl
  20. Add unsalted butter, icing sugar and elderflower cordial to the kCook bowl
  21. Fit kCook bowl to kCook Multi
  22. Attach lid to kCook bowl with filler cap fitted
  23. Mix with filler cap fitted - 1 min, speed 5
  24. Mix with filler cap fitted - 4 min, speed 7
  25. Transfer icing to piping bag
  26. Pipe the icing on to half of the shortbread
  27. Place another shortbread on top to create a sandwich
  28. Add icing sugar and water to a clean small bowl
  29. Mix until smooth
  30. Drizzle biscuits with icing
  31. Serve
