  1. Attach the Dough Tool
  2. Add water and dried yeast to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 2 min, 35°C, Speed Min
  5. Then add italian 00 flour, whole wheat flour and salt to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted - 7 min, Speed 1
  7. Then add walnut pieces to the Cooking Chef XL Bowl
  8. Mix with splashguard fitted - 3 min, Speed Min
  9. Remove the Dough Tool
  10. Prove with splashguard fitted - 1 hr 30 min, 30°C, Speed OFF
  11. Pre-heat oven - 250°C
  12. Grease a clean baking tray with oil
  13. Transfer dough to lightly floured surface
  14. Cut into pieces
  15. Let rest - 10 min
  16. Roll into balls
  17. Transfer dough balls to baking tray
  18. Cover with kitchen towel
  19. Prove - 1 hr
  20. Spray with water
  21. Cut crosses with a pair of scissors on the top of each dough ball
  22. Reduce oven temperature to 230°C
  23. Bake - 15 min, 230°C
  24. Serve
