This is a classic sponge cake from the English kitchen, easy to make and guaranteed a successful addition to a traditional afternoon tea.

Step preview

  1. Pre-heat oven - 175°C
  2. Prepare 2 clean round pans with parchment paper
  3. Fit stir tool to kCook bowl
  4. Add unsalted butter and caster sugar to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl with filler cap fitted
  7. Mix with filler cap fitted - 2 min 30 sec, speed 7
  8. Add egg, milk, all purpose flour, vanilla extract and baking powder to a clean medium bowl
  9. Transfer content of medium bowl to kCook bowl
  10. Mix with filler cap fitted then scrape bowl - 1 min 10 sec, speed 6
  11. Scrape
  12. Mix with filler cap fitted - 20 sec, speed 6
  13. Divide content of kCook bowl between 2 round pans evenly
  14. Bake until skewer tests clean - 20 min, 175°C
  15. Cool - 5 min
  16. Remove carefully onto cooling rack and let cool - 30 min
  17. Spread with strawberry jam and buttercream frosting
  18. Assemble carefully
  19. Dust with icing sugar
  20. Serve
