Sweet banana muffins, great as a mid-morning snack. You can add a handful of chocolate chips, blueberries or chopped nuts to the mixture.

Step preview

  1. Pre-heat oven - 190°C
  2. Line a clean muffin pan with paper muffin cups
  3. Attach the Creaming Beater
  4. Add butter to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Heat with splashguard fitted until melted - 2 min, 60°C, Speed OFF
  7. Then add banana to the Cooking Chef XL Bowl
  8. Mix with splashguard fitted until blended - 1 min, Speed 1
  9. Then add all purpose flour, light brown sugar, egg, milk, baking soda, baking powder, salt, ground cinnamon and mixed spice to the Cooking Chef XL Bowl
  10. Mix with splashguard fitted until combined then scrape bowl - 1 min, Speed 1
  11. Mix with splashguard fitted until combined - 30 sec, Speed 1
  12. Transfer mixture to muffin pan
  13. Sprinkle with nuts, dried banana and demerara sugar
  14. Bake - 5 min, 190°C
  15. Reduce - 170°C
  16. Bake until skewer tests clean - 22 min, 170°C
  17. Let cool - approx 5 min
  18. Turn out onto cooling rack
  19. Serve
