Step preview

  1. Add apple, sugar, ground cinnamon and lemon to a clean saucepan
  2. Heat until simmering - medium-high heat
  3. Simmer until you obtain a creamy compote
  4. Let cool
  5. Attach K Beater
  6. Add all purpose flour, unsalted butter, salt, water and brown sugar to the Kenwood Bowl
  7. Mix until combined - 3 min, Speed 1
  8. Transfer dough to lightly floured surface
  9. Roll out
  10. Fold into thirds and turn 90 degrees
  11. Repeat rolling out and folding 4-5 times
  12. Wrap with plastic wrap
  13. Chill in fridge - 30 min
  14. Pre-heat oven - 190°C
  15. Remove plastic wrap
  16. Roll out thinly
  17. Cut out into strips
  18. Cut out into rounds
  19. Transfer pastry to 4 small tart pans
  20. Line until covered
  21. Divide content of saucepan between 4 small tart pans evenly
  22. Decorate with remaining pastry
  23. Bake - 25 min, 190°C
  24. Serve
