Step preview

  1. Pre-heat oven - 180°C
  2. Line a clean swiss roll pan with parchment paper then set aside
  3. Attach Whisk
  4. Add egg and caster sugar to the kMix Bowl
  5. Whisk with splashguard fitted until foamy - Speed 5
  6. Then add all purpose flour and cornflour to the kMix Bowl
  7. Whisk with splashguard fitted until combined - Speed 1
  8. Remove the bowl from the machine
  9. Add speculoos cookies to the kMix Bowl
  10. Fold gently until combined
  11. Add oil to the kMix Bowl
  12. Fold gently until combined
  13. Transfer content of kMix Bowl to swiss roll pan
  14. Spread until level
  15. Bake - 16 min, 180°C
  16. Remove from oven and let cool
  17. Clean Kenwood Bowl
  18. Attach Whisk
  19. Add mascarpone cheese, milk, whipping cream and icing sugar to the kMix Bowl
  20. Whisk with splashguard fitted until thickened - Speed 5
  21. Transfer three quarters of content of kMix Bowl to large glass bowl
  22. Transfer the rest of content of kMix Bowl to medium bowl
  23. Add coffee extract to the medium bowl
  24. Stir until well combined then set aside
  25. Turn out content of swiss roll pan onto work surface
  26. Trim the edges
  27. Add coffee and sugar to a clean small bowl
  28. Stir until well combined
  29. Transfer syrup to sponge
  30. Brush the sponge all over and let the syrup soak in
  31. Transfer content of large glass bowl to sponge
  32. Spread evenly until covered
  33. Transfer content of medium bowl to sponge
  34. Spread evenly until covered
  35. Roll into a log
  36. Transfer cake to serving plate
  37. Chill in fridge - approx 2 hr
  38. Remove from the fridge
  39. Spread with jam thinly
  40. Sprinkle with speculoos cookies
  41. Serve
