Step preview

  1. Attach Dough Tool
  2. Add all purpose flour, salt, caster sugar, fresh yeast and egg to the kMix Bowl
  3. Knead with splashguard fitted until well combined - approx 8 min, Speed 1
  4. Add butter to the kMix Bowl while machine is running
  5. Knead with splashguard fitted - approx 2 min, Speed 1
  6. Remove the bowl from the machine
  7. Cover with plastic wrap
  8. Prove until doubled - 1 hr
  9. Pre-heat oven - 200°C
  10. Grease a clean springform pan then set aside
  11. Transfer content of kMix Bowl to lightly floured surface
  12. Shape into balls
  13. Transfer dough balls to springform pan
  14. Brush with egg
  15. Sprinkle with pearl sugar
  16. Bake until golden brown - 30 min, 200°C
  17. Remove from oven and let cool
  18. Add milk to a clean saucepan
  19. Heat until boiling - medium-high heat
  20. Add sugar, egg yolk and cornflour to a clean heatproof bowl
  21. Mix until well combined
  22. Pour content of saucepan into heatproof bowl
  23. Stir until combined
  24. Return milk mixture to saucepan
  25. Heat until thickened - medium heat
  26. Pour content of saucepan into heatproof bowl
  27. Cover with plastic wrap
  28. Set aside and let cool
  29. Clean Kenwood Bowl
  30. Attach Whisk
  31. Add whipping cream, mascarpone cheese and icing sugar to the kMix Bowl
  32. Whisk with splashguard fitted until thickened - Speed Max
  33. Remove the bowl from the machine
  34. Remove the plastic wrap from the pastry cream
  35. Add milk to the heatproof bowl
  36. Stir well
  37. Transfer half of content of kMix Bowl to heatproof bowl
  38. Stir gently until well combined
  39. Transfer the rest of content of kMix Bowl to heatproof bowl
  40. Stir gently until well combined
  41. Prepare a clean piping bag with open star tip
  42. Transfer content of heatproof bowl to piping bag then set aside
  43. Turn out content of springform pan onto cutting board
  44. Cut into halves
  45. Place one piece of cake on serving plate
  46. Pipe content of piping bag onto cake
  47. Place the other piece of cake on top
  48. Serve
