  1. Attach the Creaming Beater
  2. Add dark chocolate and unsalted butter to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted until combined - 1 min, Speed 2
  5. Then add icing sugar, sea salt and cocoa powder to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted until combined - 1 min, Speed 2
  7. Transfer content of Cooking Chef XL Bowl to medium bowl then set aside
  8. Clean Cooking Chef bowl
  9. Attach the Dough Tool
  10. Add whole milk and fresh yeast to the Cooking Chef XL Bowl
  11. Heat with splashguard fitted - 5 min, 30°C, Speed OFF
  12. Then add pastry flour, sugar and salt to the Cooking Chef XL Bowl
  13. Add egg to the Cooking Chef XL Bowl while machine is running
  14. Knead with splashguard fitted - 3 min, Speed 1
  15. Add butter to the Cooking Chef XL Bowl while machine is running
  16. Knead with splashguard fitted - 10 min, Speed 1
  17. Remove the Dough Tool
  18. Prove with splashguard fitted - 45 min, 30°C, Speed OFF
  19. Transfer content of Cooking Chef XL Bowl to lightly floured surface
  20. Knead lightly
  21. Roll into a ball
  22. Transfer dough to large glass bowl
  23. Cover with plastic wrap
  24. Let rest overnight
  25. Transfer content of large glass bowl to lightly floured surface
  26. Roll into balls
  27. Chill in fridge - 1 hr
  28. Remove the dough from the fridge
  29. Roll 4 balls of dough into a circle approx. 10-12 cm
  30. Spread 3 with chocolate filling
  31. Stack the 3 chocolate dough circles on top of each other and top with the non-chocolate dough circle
  32. Repeat with the rest
  33. Cut out 8 small triangles from the edge, approx. 1cm of each stack to a create flower shape
  34. Lightly score a line from the centre of the circle to the centre of each “petal”
  35. Using the lines as a guide, cut out a triangle from every other “petal” to create a star shape in the centre
  36. Remove the dough to expose the chocolate underneath
  37. Transfer shaped dough to baking tray
  38. Repeat with the rest
  39. Cover with kitchen towel
  40. Prove until doubled
  41. Pre-heat oven - 180°C
  42. Remove the kitchen towel from the dough
  43. Add egg and milk to a clean small bowl
  44. Beat lightly until well combined
  45. Brush the dough with the egg wash
  46. Bake until golden brown - 45 min, 180°C
  47. Remove from oven and continue
  48. Add water and sugar to a clean saucepan
  49. Heat until boiling - medium-high heat
  50. Brush the brioche with syrup
  51. Transfer onto cooling rack and let cool
  52. Serve
