  1. Pre-heat oven - 180°C
  2. Line a clean muffin pan with paper muffin cups
  3. Attach K Beater
  4. Add caster sugar and unsalted butter to the Kenwood bowl

  7. Then sift all purpose flour and baking powder into the Kenwood bowl
  8. Add egg and milk to the Kenwood bowl
  9. Mix with splashguard fitted until combined then scrape bowl - approx 30 sec, Speed Max
  10. Mix with splashguard fitted until smooth - approx 30 sec, Speed Max
  11. Then add raspberries and white chocolate to the Kenwood bowl
  12. Mix with splashguard fitted until combined - approx 30 sec, Speed Max
  13. Divide mixture between muffin pan evenly
  14. Top with raspberries
  15. Bake until skewer tests clean - 25 min, 180°C
  16. Turn out onto cooling rack
  17. Serve
