This cake is extremely sticky, but extremely delicious. Serve slightly warm with vanilla ice cream or cold to accompany your afternoon tea.

Step preview

  1. Pre-heat oven - 160°C
  2. Grease and line a clean square pan with parchment paper
  3. Attach K Beater
  4. Add all purpose flour, baking powder, baking soda, ground ginger, ground cinnamon, mixed spice and butter to the Kenwood bowl
  5. Mix with splashguard fitted until coarse crumbs form - approx 30 sec, Speed 1
  6. Transfer mixture to bowl then set aside
  7. Clean Kenwood Bowl
  8. Attach K Beater
  9. Add muscovado sugar, treacle, golden syrup, whole milk and stem ginger to the Kenwood bowl
  10. Mix with splashguard fitted until combined - approx 30 sec, Speed 1
  11. Transfer mixture to Kenwood bowl
  12. Add egg to the Kenwood bowl while machine is running
  13. Mix with splashguard fitted until thick - approx 4 min, Speed Min
  14. Transfer mixture to square pan
  15. Spread until level
  16. Bake until skewer tests clean - 40 min, 160°C
  17. Let cool on round wire rack
  18. Serve
