Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Pre-heat oven - 170°C
  3. Attach K Beater
  4. Add rice flour, cornflour, baking powder, golden caster sugar, butter, lemon zest, lemon, egg yolk, vanilla extract, salt and milk to the Kenwood bowl
  5. Mix with splashguard fitted until combined - 2 min, Speed Max
  6. Chill in fridge - 1 hr
  7. Transfer dough to lightly floured surface
  8. Roll out into balls
  9. Transfer balls to baking tray and press down
  10. Bake until golden brown - 18 min, 170°C
  11. Remove onto cooling rack and let cool
  12. Serve
