A quick carrot cake with cream cheese frosting which is an impressive treat for friends and family to share - also great for using up excess carrots! You could add extra chopped walnuts or mixed seeds to decorate the top of the cake if you like.

Step preview

  1. Pre-heat oven - 180°C
  2. Grease and line 2 clean round pans with parchment paper
  3. Attach K Beater
  4. Add all purpose flour, baking soda, baking powder, ground cinnamon, mixed spice and salt to the Kenwood bowl
  5. Mix with splashguard fitted until combined - 10 sec, Speed 2
  6. Then add milk, oil, egg, lemon juice, vanilla extract and light brown sugar to the Kenwood bowl
  7. Mix with splashguard fitted until combined - 30 sec, Speed 2
  8. Then add carrot, unsweetened shredded coconut, walnut pieces and orange to the Kenwood bowl
  9. Mix with splashguard fitted until combined - 20 sec, Speed 4
  10. Divide batter between 2 round pans evenly
  11. Bake until skewer tests clean - 30 min, 180°C
  12. Let cool - 10 min
  13. Turn out onto cooling rack until completely cool
  14. Clean Kenwood Bowl
  15. Attach K Beater
  16. Add icing sugar, cream cheese, butter and vanilla extract to the Kenwood bowl
  17. Mix with splashguard fitted until smooth - 1 min, Speed 4
  18. Transfer icing to medium bowl
  19. Chill in fridge until thickened - 10 min
  20. Place one sponge on serving plate
  21. Add half of icing to sponge
  22. Spread evenly
  23. Sandwich the second sponge layer on top
  24. Add the rest of icing to sponge
  25. Spread evenly
  26. Dust with ground cinnamon
  27. Sprinkle with walnuts
  28. Serve
