Step preview

  1. Pre-heat oven - 190°C
  2. Add butter to the clean ramekins
  3. Grease thoroughly
  4. Add caster sugar to the ramekins
  5. Coat until covered
  6. Chill in fridge and continue
  7. Attach the Creaming Beater
  8. Add banana, rum and vanilla extract to the Cooking Chef XL Bowl
  9. Lift the Cooking Chef head and fit the heat shield
  10. Mix until smooth - 1 min, Stir 1
  11. Strain the mixture through a sieve into a jug to make it smooth
  12. Transfer the mixture back into the Cooking Chef bowl
  13. Add cornflour and water to a clean small bowl
  14. Stir until well combined
  15. Transfer cornflour mixture to Cooking Chef XL Bowl
  16. Add caster sugar to the Cooking Chef XL Bowl
  17. Cook until thickened - 2 min, 110°C, Speed 1
  18. Mix - 2 min, Speed 1
  19. Transfer content of Cooking Chef XL Bowl to large glass bowl
  20. Cover with plastic wrap and let cool
  21. Clean Cooking Chef bowl
  22. Attach the Whisk
  23. Add egg white to the Cooking Chef XL Bowl
  24. Add caster sugar to the Cooking Chef XL Bowl while machine is running
  25. Whisk with splashguard fitted until soft peaks form - 2 min, Speed 6
  26. Transfer one third of meringue to large glass bowl
  27. Stir gently until well combined
  28. Gently fold in another one third of the meringue into the mixture
  29. Gently fold in the remaining meringue
  30. Spoon content of large glass bowl into 6 ramekins
  31. Scrape across the top with spatula to level
  32. Run a small knife or the tip of your thumb around the top edge of the ramekin to prevent the mixture sticking
  33. Place ramekins on baking tray
  34. Bake - 8 min, 190°C
  35. Remove from oven
  36. Decorate with icing sugar
  37. Serve immediately
