  2. Add all purpose flour, brown sugar, butter, egg, baking powder, ground cinnamon and mixed spice to the Kenwood bowl
  3. Mix with splashguard fitted until combined - approx 1 min, Speed Max
  4. Cover a clean work surface with plastic wrap
  5. Transfer dough to work surface
  6. Wrap with plastic wrap
  7. Chill in fridge - 1 hr
  8. Pre-heat oven - 160°C
  9. Roll out until 1/8" (5mm) thick
  10. Cut out into rounds
  11. Line a clean baking sheet with parchment paper
  12. Transfer dough to baking sheet
  13. Bake until golden brown - 20 min, 160°C
  14. Serve
