This peanut butter cookie recipe is gluten free and only has four ingredients so making it when you have a cookie craving should be easy. They require 30 minutes freezing time before baking, this is to help form the cookie shape as it is a very soft dough. Adding a sprinkle of coarse sea salt to the cookies before baking is recommended but entirely optional.

  1. Grease and line a clean baking tray with parchment paper
  2. Attach K Beater
  3. Add light brown sugar, egg and vanilla extract to the Kenwood bowl
  4. Mix with splashguard fitted until combined - 2 min, Speed 3
  5. Then add smooth peanut butter to the Kenwood bowl
  6. Mix with splashguard fitted until combined - 2 min, Speed 3
  7. Spoon mixture into baking tray and press down
  8. Sprinkle with sea salt
  9. Place in freezer - 30 min
  10. Pre-heat oven - 170°C
  11. Remove the baking tray from the freezer
  12. Bake until golden brown and let cool - 16 min, 170°C
  13. Serve
