There are many recipes available to prepare potato purée (or mash potatoes) with the Cooking Chef but all of them uses it mainly to boil the potatoes in water and then crush them with the K-beater. This recipe is a “one-pot” version that I have specifically conceived for the Cooking Chef XL Connect and the creaming beater attachment, it does not require to boil potatoes first and it is one of the tastiest and flavoursome I have ever tried! Like all recipes with potatoes, the variety used can change completely the result, for this recipe, I suggest using red potatoes or a variety with a low level of starch. Any leftover can be stored in an airtight container for up to 2 days in a fridge. If you have one, you can use the food processor on the high speed outlet of your machine to slice the potatoes, then wash the slices under cold running water until the water runs clear, this will remove most of the starch and prevent the purée from turning gluey.
