The flammekueche or tarte flambée (cooked in a wood-fire oven) is a speciality of the regions of Alsace, Saarland, Baden and Pfalz at the French-German border region. It is bread dough rolled out very thinly and covered with fromage blanc or crème fraîche, thin-sliced onions and lardons. It is one of the most famous specialties of the region.

Step preview

  1. Pre-heat oven - 220°C
  2. Put a large baking tray in the oven to heat up
  3. Attach the Dough Tool
  4. Add all purpose flour, olive oil, salt and water to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Mix with splashguard fitted until combined - 1 min, Speed 1
  7. Mix with splashguard fitted until mixture comes together - 2 min, Speed 2
  8. Transfer dough to medium bowl and cover
  9. Clean Cooking Chef bowl
  10. Attach the Stir Tool and Stir Assist Clip
  11. Add butter to the Cooking Chef XL Bowl
  12. Heat with splashguard fitted until melted - 1 min 30 sec, 110°C, Speed OFF
  13. Then add cubed bacon to the Cooking Chef XL Bowl
  14. Cook with splashguard fitted until golden brown - 4 min, 120°C, Stir 2
  15. Remove the bacon with a slotted spoon and transfer to a small bowl
  16. Add onion and salt to the Cooking Chef XL Bowl
  17. Cook with splashguard fitted until softened - 7 min, 110°C, Stir 2
  18. Then add crème fraîche, ground nutmeg, salt and black pepper to the Cooking Chef XL Bowl
  19. Mix with splashguard fitted until combined - 30 sec, Speed Min
  20. Transfer dough to lightly floured surface
  21. Roll out into a rectangle
  22. Remove the hot baking tray from the oven
  23. Grease a clean baking tray lightly with olive oil
  24. Place dough on baking tray carefully
  25. Add filling to dough
  26. Add the bacon lardons on top of the onion mixture
  27. Top with gruyère cheese
  28. Bake until light golden - 15 min, 220°C
  29. Serve
