Step preview

  1. Add gruyère cheese and cheddar cheese to a clean small bowl and mix
  2. Pre-heat oven - 170°C
  3. Attach the Stir Tool
  4. Add butter to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Heat with splashguard fitted until melted - 2 min, 98°C, Stir 2
  7. Then add all purpose flour to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted until smooth - 4 min, 105°C, Stir 1
  9. Then add milk, salt, black pepper and dijon mustard to the Cooking Chef XL Bowl
  10. Attach the Whisk
  11. Cook with splashguard fitted until combined - 50 sec, 140°C, Speed 4
  12. Cook with splashguard fitted until thick - 3 min, 120°C, Speed 2
  13. Then add gruyère cheese to the Cooking Chef XL Bowl
  14. Mix with splashguard fitted until combined - 20 sec, Speed 2
  15. Transfer sauce to small bowl then set aside
  16. Cut the croissants almost in half and open up
  17. Place croissant on a clean baking tray
  18. Bake until light golden - 10 min, 170°C
  19. Remove from oven
  20. Spread with dijon mustard
  21. Top with sliced ham
  22. Scatter cheese over baking tray
  23. Spread some of the bechamel sauce from the small bowl onto the opposite side of the croissant
  24. Bake until melted - 5 min, 170°C
  25. Remove from oven
  26. Sandwich the croissants halves together
  27. Add the remaining bechamel sauce on top of the croissant
  28. Bake until lightly browned - 5 min, 170°C
  29. Remove from oven
  30. Garnish with fresh chives
  31. Serve
