Toasted tortilla sandwiches filled with spiced black beans, cheese and coriander. Serve hot with avocado or salsa, fresh limes and your favourite dip. This recipe makes enough filling to make 6 quesadillas, however you could use less filling to make it go further. Store any leftovers in the fridge or freezer.

  1. Attach the Stir Tool and Stir Assist Clip
  2. Add olive oil to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat with splashguard fitted until hot - 2 min, 120°C, Speed OFF
  5. Then add onion to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted until tender - 5 min, 110°C, Stir 2
  7. Then add garlic clove and red chili to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted until soft - 3 min, 110°C, Stir 1
  9. Then add tomato paste, ground coriander, ground cumin, chipotle paste, black pepper and salt to the Cooking Chef XL Bowl
  10. Cook with splashguard fitted until fragrant - 5 min, 110°C, Stir 1
  11. Then add canned black beans, vegetable stock, cilantro and lime to the Cooking Chef XL Bowl
  12. Cook with splashguard fitted until combined - 2 min, 110°C, Stir 1
  13. Cook with splashguard fitted until cooked through - 25 min, 105°C, Stir 1
  14. Heat a clean griddle pan - medium-high heat
  15. Place corn tortilla on a clean work surface
  16. Transfer two spoonfuls mixture to tortillas
  17. Top with cheddar cheese
  18. Garnish with cilantro
  19. Top with another tortilla
  20. Transfer tortillas to griddle pan
  21. Cook each side until light golden - 2 min, medium-high heat
  22. Transfer the quesadilla to a cutting board and cut into squares
  23. Repeat the same with the remaining bean mixture
  24. Serve
