Barazek is a delicious Syrian cookie with sesame seeds and crushed pistachios. It has a light and crisp texture. Have a small bowl of water to dip your hands in between coating your cookies to avoid too much mess!

Step preview

  1. Add water and active dried yeast to a clean jug
  2. Mix until combined then set aside
  3. Pre-heat oven - 180°C
  4. Grease and line a clean baking tray with parchment paper
  5. Attach the Creaming Beater
  6. Add honey, sugar and water to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Cook with splashguard fitted until sugar has dissolved - 2 min, 180°C, Stir 1
  9. Transfer syrup to small bowl and let cool
  10. Clean Cooking Chef bowl
  11. Attach the Creaming Beater
  12. Add all purpose flour, icing sugar and butter to the Cooking Chef XL Bowl
  13. Mix with splashguard fitted until combined - 30 sec, Speed 1
  14. Transfer yeast mixture to Cooking Chef XL Bowl gradually while machine is running
  15. Mix with splashguard fitted until combined - 1 min, Speed 1
  16. Add sesame seeds to a clean small bowl
  17. Add syrup to small bowl gradually
  18. Mix until combined
  19. Add pistachios to a clean small bowl
  20. Roll around 1 teaspoon of batter in your hands
  21. Press into the sesame seeds and flatten into a disk
  22. Flip over and press the other side into the chopped pistachios
  23. Transfer cookies to baking tray
  24. Flatten down as much as possible to create a crispy cookie
  25. Repeat the same with all the mixture
  26. Bake until golden brown - 25 min, 180°C
  27. Turn out onto cooling rack and let cool
  28. Serve
