  1. Pre-heat oven - 170°C
  2. Grease and line a clean loaf pan with parchment paper
  3. Attach K Beater
  4. Add unsalted butter, all purpose flour, baking powder, brown sugar, unsweetened shredded coconut, egg and milk to the Kenwood bowl
  5. Mix with splashguard fitted until combined - approx 2 min, Speed Max
  6. Pour batter into loaf pan
  7. Bake - 40 min, 170°C
  8. Turn out on round wire rack and let cool
  9. Serve
