This is a delicate cake which has a similar texture to a baked cheesecake without the biscuit base. The fromage blanc - which can be substituted for cottage cheese or Greek yogurt - gives this cake a slightly sour taste. It is delicious served with a fruit compote or coulis.

Step preview

  1. Pre-heat oven - 170°C
  2. Grease and flour a clean round pan
  3. Attach the Whisk
  4. Add egg yolk and caster sugar to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Mix with splashguard fitted until combined - 2 min, Speed 4
  7. Then add fromage blanc, cornflour and lime to the Cooking Chef XL Bowl
  8. Attach the Creaming Beater
  9. Mix with splashguard fitted until smooth - 30 sec, Speed 3
  10. Transfer batter to medium bowl
  11. Clean Cooking Chef bowl
  12. Attach the Whisk
  13. Add egg white to the Cooking Chef XL Bowl
  14. Mix with splashguard fitted until stiff peaks form - 1 min 10 sec, Speed Max
  15. Transfer egg whites to medium bowl gradually
  16. Fold carefully until combined
  17. Transfer mixture to round pan
  18. Bake until golden brown and let cool - 50 min, 170°C
  19. Remove from oven
  20. Transfer cake to serving plate
  21. Dust with icing sugar
  22. Serve with raspberries
  23. Serve
