This basic puff pastry can be used for lots of different recipes, from simple cheese straws to Danish pastries and intricate lattice pies. To use: Shape pastry until desired, chill before baking and then bake for 20 minutes at 200°C.

Step preview

  1. Fit midi blade to kCook bowl
  2. Add water, all purpose flour, unsalted butter and salt to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Mix with filler cap fitted - 2 min, speed 5
  6. Transfer dough to lightly floured surface and bring together
  7. Wrap with plastic wrap
  8. Chill in fridge - 30 min
  9. Transfer dough to lightly floured surface
  10. Roll out into a rectangle until 1/8" (5mm) thick then set aside
  11. Line a clean work surface with parchment paper
  12. Add unsalted butter to the work surface
  13. Place another sheet of parchment paper on top
  14. Roll the butter out into a rectangle about a third of the size of the pastry
  15. Place the butter in the middle of the pastry
  16. Fold the top third of the pastry over the butter then fold the bottom third over the top
  17. Tightly pinch the seams to seal
  18. Roll out until 1/8" (5mm) thick
  19. Turn the dough 45° so the longer edge is now facing you and repeat the rolling and folding action
  20. Wrap with plastic wrap
  21. Chill in fridge - 30 min
  22. Repeat the folding and chilling process twice more
