Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Sift all purpose flour and matcha powder into a clean medium bowl
  3. Repeat this process - needs to be sieved twice
  4. Stir until combined then set aside
  5. Attach the Creaming Beater
  6. Add butter, icing sugar and salt to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Mix with splashguard fitted until smooth - 1 min, Speed 3
  9. Pour egg yolk into the Cooking Chef XL Bowl slowly while machine is running
  10. Mix with splashguard fitted until combined - 30 sec, Speed 1
  11. Transfer flour mixture to Cooking Chef XL Bowl
  12. Mix with splashguard fitted until mixture comes together - 40 sec, Speed 1
  13. Transfer dough to lightly floured surface
  14. Divide into halves
  15. Roll into logs
  16. Wrap with plastic wrap
  17. Chill in fridge - 1 hr
  18. Pre-heat oven - 150°C
  19. Remove the chilled dough from the fridge
  20. Sprinkle a clean work surface with granulated sugar
  21. Roll each log in granulated sugar and slice into 7mm (0.25”) rounds
  22. Place biscuits on baking tray
  23. Bake until light golden - 25 min, 150°C
  24. Remove from oven and let cool
  25. Serve
