Step preview

  1. Fit coarse grating disc (3) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Grease and flour 4 clean ramekins
  4. Fit whisk tool to kCook bowl
  5. Add butter to the kCook bowl
  6. Fit kCook bowl to kCook Multi
  7. Attach lid to kCook bowl with filler cap fitted
  8. Cook with filler cap fitted - 1 min 15 sec, 80°C, speed 4
  9. Then add all purpose flour to the kCook bowl
  10. Cook with filler cap fitted - 5 min, 110°C, speed 6
  11. Then add milk to the kCook bowl
  12. Cook with filler cap fitted - 20 min, 98°C, speed 6
  13. Turn direct prep attachment to position 1
  14. Grate cheddar cheese into the kCook bowl with direct prep attachment
  15. Turn direct prep attachment to position 2
  16. Add dijon mustard, salt & pepper, lemon juice and egg yolk to the kCook bowl while machine is running
  17. Whisk with filler cap fitted - 5 min, speed 6
  18. Transfer content of kCook bowl to large mixing bowl then set aside
  19. Clean kCook bowl
  20. Fit whisk tool to kCook bowl
  21. Add egg white to the kCook bowl
  22. Fit kCook bowl to kCook Multi
  23. Attach lid to kCook bowl
  24. Whisk with filler cap removed - 2 min, speed 9
  25. Pre-heat oven - 190°C
  26. Transfer one quarter of content of kCook bowl to cheese mixture
  27. Fold gently
  28. Fold the rest of content of kCook bowl into cheese mixture
  29. Transfer cheese mixture to 4 ramekins
  30. Transfer ramekins to baking dish
  31. Fill halfway with water
  32. Bake - 15 min, 190°C
  33. Let cool - approx 20 min
  34. Turn out
  35. Store in fridge
  36. Slice celery stalk and green onion into a clean medium bowl
  37. Divide the vegetables between the small baking dishes
  38. Place souffle on 4 small baking dish
  39. Divide double cream, pine nuts and parmesan cheese between the small baking dish
  40. Bake - 15 min, 190°C
  41. Serve immediately
