This classic French stew is wonderful hot or cold as a main dish or a partner for grilled fish, chicken, or steak. Naturally, it is best in summer months, when tomatoes, peppers, aubergine and courgette are in season.

Step preview

  1. Pre-heat oven - 180°C
  2. Attach the Stir Tool
  3. Add oil to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted until hot - 1 min, 120°C, Stir 1
  6. Then add onion to the Cooking Chef XL Bowl
  7. Cook with splashguard fitted until translucent - 4 min, 120°C, Stir 1
  8. Then add garlic clove to the Cooking Chef XL Bowl
  9. Cook with splashguard fitted until translucent - 2 min, 120°C, Stir 1
  10. Then add red bell pepper and yellow bell pepper to the Cooking Chef XL Bowl
  11. Cook with splashguard fitted until softened - 4 min, 120°C, Stir 1
  12. Then add canned tomatoes to the Cooking Chef XL Bowl
  13. Cook with splashguard fitted until thickened - 5 min, 120°C, Stir 1
  14. Then add salt, black pepper and fresh basil leaves to the Cooking Chef XL Bowl
  15. Cook with splashguard fitted until fragrant - 2 min, 120°C, Stir 1
  16. Transfer sauce to baking dish
  17. Arrange eggplant, beef tomato and zucchini in the baking dish
  18. Assemble the Food Processor attachment to the machine
  19. Fit the knife blade to the Food Processor bowl
  20. Add fresh parsley, dried thyme, garlic clove, fresh basil leaves and oil to the Food processor attachment
  21. Attach the lid and ensure it is locked into place
  22. Blend until smooth
  23. Drizzle vegetables with sauce
  24. Drizzle with olive oil
  25. Cover with foil
  26. Bake - 1 hr, 180°C
  27. Remove the kitchen foil
  28. Bake until softened - 20 min, 180°C
  29. Serve
