Japanese dumplings- also called 'pot stickers'- filled with a mixture of chopped mushrooms, carrots and spring onions with cashews and water chestnuts for added texture. These tasty dumplings are packed with flavour from the ginger, garlic, and chilli as well as soy, sesame, and oyster sauce- which can be substituted for a vegan alternative if you prefer.

Step preview

  1. Line a clean baking tray with parchment paper
  2. Attach the Dough Tool
  3. Add all purpose flour, water and salt to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Mix with splashguard fitted until combined - 1 min, Speed Min
  6. Mix with splashguard fitted until mixture comes together - 2 min, Speed 1
  7. Transfer dough to work surface
  8. Wrap with plastic wrap then set aside
  9. Assemble the Food Processor attachment to the machine
  10. Fit the coarse grating disc, attach the lid and ensure it is locked into place
  11. Grate cabbage and carrot into the Food processor attachment
  12. Transfer vegetables to medium bowl
  13. Assemble the Food Processor attachment to the machine
  14. Fit the knife blade to the Food Processor bowl
  15. Add oyster mushroom, chestnut mushrooms and shiitake mushrooms to the Food processor attachment
  16. Attach the lid and ensure it is locked into place
  17. Pulse until just blended
  18. Transfer mixture to medium bowl then set aside
  19. Add water chestnuts, cashew nuts, green onion, garlic clove, red chili, cilantro and ginger to the Food processor attachment
  20. Attach the lid and ensure it is locked into place
  21. Pulse until smooth
  22. Transfer mixture to medium bowl then set aside
  23. Add oyster sauce, soy sauce, sesame oil and white pepper to a clean medium bowl
  24. Stir until combined then set aside
  25. Transfer dough to lightly floured surface
  26. Roll out thinly
  27. Cut out into rounds
  28. Transfer filling to dough
  29. Dab a little water around the edge
  30. Bring the two sides up into a fold
  31. Start to join one end by folding pleats until the dumpling is sealed
  32. Place dumplings on baking tray
  33. Add vegetable oil to a clean frying pan
  34. Heat in frying pan until hot - medium-high heat
  35. Transfer dumplings to frying pan
  36. Fry until golden brown - 5 min
  37. Add water to the frying pan and cover
  38. Steam - 3 min
  39. Serve
