  1. Attach the Whisk
  2. Add butter to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat - 3 min, 60°C, Speed OFF
  5. Transfer content of Cooking Chef XL Bowl to jug
  6. Clean Cooking Chef bowl
  7. Attach the Whisk
  8. Add water, white wine vinegar, egg yolk and salt & pepper to the Cooking Chef XL Bowl
  9. Cook with splashguard fitted - 4 min, 72°C, Speed 6
  10. Transfer content of jug to Cooking Chef XL Bowl slowly while machine is running
  11. Cook with splashguard fitted until thickened - 4 min, 72°C, Speed 2
  12. Serve
