Step preview

  1. Pre-heat oven - 170°C
  2. Grease and line a clean square pan with parchment paper
  3. Attach the K-Beater
  4. Add all purpose flour, butter and caster sugar to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Mix with splashguard fitted until combined - 2 min, Speed 2
  7. Add milk to the Cooking Chef XL Bowl while machine is running
  8. Mix with splashguard fitted until combined - 10 sec, Speed 2
  9. Transfer batter to square pan
  10. Flatten out using the back of tablespoon
  11. Bake until golden brown - 20 min, 170°C
  12. Remove from oven and let cool
  13. Reduce the oven temperature to 160ºC
  14. Assemble the Food Processor attachment to the machine
  15. Fit the knife blade to the Food Processor bowl
  16. Add raspberries and blueberries to the Food processor attachment
  17. Attach the lid and ensure it is locked into place
  18. Blend until smooth - 1 min
  19. Clean Cooking Chef bowl
  20. Attach the Creaming Beater
  21. Strain fruit into Cooking Chef XL Bowl
  22. Add caster sugar to the Cooking Chef XL Bowl
  23. Cook with splashguard fitted until thickened - 3 min, 120°C, Stir 1
  24. Transfer mixture to small bowl then set aside
  25. Clean Cooking Chef bowl
  26. Attach the Whisk
  27. Add sugar, lemon and egg to the Cooking Chef XL Bowl
  28. Mix with splashguard fitted until foamy - 5 min, Speed Max
  29. Add all purpose flour to the Cooking Chef XL Bowl gradually while machine is running
  30. Mix with splashguard fitted until combined - 1 min, Speed 4
  31. Pour mixture into pastry
  32. Spoon fruit into pastry
  33. Swirl around gently
  34. Bake until just set - 30 min, 160°C
  35. Remove from oven and let cool
  36. Transfer pastry to cutting board
  37. Cut into pieces
  38. Dust with icing sugar
  39. Serve
