Step preview

  1. Attach the Creaming Beater
  2. Add whole milk and caster sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat with splashguard fitted until sugar has dissolved - 1 min, 60°C, Stir 1
  5. Then add unsalted butter to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted until melted - 3 min, Stir 1
  7. Remove the Creaming Beater
  8. Add active dried yeast to the Cooking Chef XL Bowl
  9. Let rest - 5 min
  10. Add bread flour, salt and egg to the Cooking Chef XL Bowl
  11. Attach the Dough Tool
  12. Knead until dough forms - 10 min, Speed 1
  13. Remove the dough from the bowl
  14. Lightly oil the Cooking Chef XL Bowl
  15. Place the dough back in the Cooking Chef XL bowl
  16. Remove the Dough Tool
  17. Prove with splashguard fitted until doubled - 1 hr, 30°C, Speed OFF
  18. Line a clean baking tray with parchment paper
  19. Transfer dough to lightly floured surface
  20. Divide into pieces
  21. Roll into balls
  22. Transfer dough balls to baking tray
  23. Cover then set aside - 45 min
  24. Add cream cheese, sugar, all purpose flour and lemon zest to the Cooking Chef XL Bowl
  25. Mix with splashguard fitted until combined - 1 min, Speed 2
  26. Transfer mixture to small bowl then set aside
  27. Add all purpose flour, unsalted butter and sugar to the Cooking Chef XL Bowl
  28. Mix with splashguard fitted until coarse crumbs form - 30 sec, Speed 1
  29. Pre-heat oven - 180°C
  30. Once the dough has rested, form a hollow in the centre of each disc by pressing with your fingers or a glass to make an edge
  31. Add cheese mixture to dough balls
  32. Add blueberry compote to the dough balls
  33. Brush with egg
  34. Scatter flour mixture over dough balls
  35. Top with blueberries
  36. Sprinkle with lemon zest
  37. Bake until golden brown - 20 min, 180°C
  38. Remove from oven
  39. Turn out onto cooling rack and let cool
  40. Serve
