Here’s a modified letter cake – I made it savoury – to go with the Christmas season. I added various spices to the two crispy shortcrust bases to increase the flavour. For the mousse I used a combination of feta cheese/goat cheese and cream cheese. I decided to go with the shape of a Christmas tree – but you can choose any other shape for any other occasion. You may also modify or replace the topping according to taste and personal preference. Delicious Christmas cream tart! User generated recipes have not been re-tested by Kenwood.

Step preview

  1. Attach the K-Beater
  2. Add whole wheat flour, all purpose flour, butter, egg, salt, black pepper, fresh rosemary and sweet paprika to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 2 min, Speed 2
  5. Line a clean work surface with plastic wrap
  6. Transfer pastry to work surface
  7. Form into a ball
  8. Wrap with plastic wrap
  9. Chill in fridge - 1 hr
  10. Clean Cooking Chef bowl
  11. Attach the K-Beater
  12. Add garlic clove, feta cheese, cream cheese, olive oil and salt & pepper to the Cooking Chef XL Bowl
  13. Mix with splashguard fitted until well combined - 2 min, Speed 2
  14. Prepare a clean piping bag with plain round tip
  15. Spoon content of Cooking Chef XL Bowl into piping bag
  16. Chill in fridge and continue
  17. Make a template using paper for the design of your choice and set aside
  18. Line a clean work surface with parchment paper
  19. Transfer pastry to work surface
  20. Roll out until 1/8" (5mm) thick
  21. Using your paper template, cut out your design and remove excess pastry
  22. Transfer pastry to baking tray
  23. Using the excess pastry, repeat the process again to create a 2nd shaped pastry
  24. Freeze - 30 min
  25. Pre-heat oven - 200°C
  26. Remove the pastry shapes from the freezer
  27. Bake until light golden - 15 min
  28. Remove from oven and let cool
  29. Place a baked pastry shape onto a serving plate
  30. Remove the cheese mixture in the piping bag from the fridge
  31. Pipe half of the cheese mixture onto the pastry
  32. Carefully place the 2nd pastry shape on top
  33. Pipe the rest of the cheese mixture onto the pastry
  34. Decorate with red bell pepper, green onion, rosemary and pitted green olives
  35. Add cheese to a clean cutting board
  36. Using a knife or star shaped cutter, cut stars from the cheese
  37. Decorate with cheese stars
  38. Serve
