These burger buns are so airy and tasty. I got my inspiration from Kebabi in Karlsruhe and wanted to turn their airy breads into burger buns. To make them soft and airy, I used burger rings. The buns are also suitable for freezing. I use them to make Summer Burgers with pineapple. User generated recipes have not been re-tested by Kenwood.

Step preview

  1. Attach the Dough Tool
  2. Add fresh yeast, water, sugar and golden syrup to the Cooking Chef XL Bowl
  3. Stir with tablespoon until dissolved
  4. Add plain yogurt, egg, all purpose flour, sunflower oil and salt to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Knead with splashguard fitted - 10 min, Speed 1
  7. Remove the Dough Tool
  8. Prove with splashguard fitted until doubled in size - 1 hr, 30°C, Speed OFF
  9. Transfer dough to lightly floured surface
  10. Use burger rings to shape either 12 large buns (150g) or 18 small buns (100g)
  11. Place the piece of dough into the ring and flatten with greased hands
  12. Transfer shaped dough to baking tray
  13. Cover with kitchen towel
  14. Prove until doubled in size - 30 min
  15. Pre-heat oven - 180°C
  16. Add egg and milk to a clean small bowl
  17. Whisk lightly until well combined
  18. Brush each bun with egg wash
  19. Sprinkle with black cumin seed and sesame seeds
  20. Bake - 20 min, 180°C
  21. Remove from oven
  22. Cover with kitchen towel and let cool
  23. Carefully remove the burger rings
  24. Serve
