I got this recipe for Bosnian pitta bread from my friend Lejla and her mum. The dough consists of just flour and water. It will be rolled out near paper-thin and then, using your fingertips, stretched on a large piece of cloth. I decided to make a classic cheese filling for the bread. Just combine farmer’s cheese and spices. For a special flavour I added nomad’s cheese (Tulum / cow milk cheese). What’s more, pitta bread can be batch-made, prebaked and frozen. During Ramadan, it’s ideal for iftar (to break the daily fast). User generated recipes have not been re-tested by Kenwood.
