Sweet dinner rolls, also known as filled yeast buns, are classic yeast pastry buns filled with apricot jam or nougat. I get asked for the recipe so often that I have now put together the classic recipe for you, with tips to succeed. I use a 28cm enamel baking tray for yeast dough made from 500g flour, a 32cm tray for yeast dough made from 750g flour and the largest, 36cm tray when I make yeast dough from 1kg flour. Step preview

  1. Attach the Dough Tool
  2. Add fresh yeast, water and sugar to the Cooking Chef XL Bowl
  3. Stir with tablespoon until dissolved
  4. Add spelt, salt, egg yolk, milk and butter to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Knead with splashguard fitted - 10 min, Speed 1
  7. Remove the dough from the Cooking Chef XL bowl
  8. Lightly grease the Cooking Chef XL bowl
  9. Return the dough to the Cooking Chef XL bowl
  10. Remove the Dough Tool
  11. Prove with splashguard fitted until doubled in size - 1 hr, 30°C, Speed OFF
  12. Transfer content of Cooking Chef XL Bowl to lightly floured surface
  13. Divide into pieces
  14. Roll into balls
  15. Roll out into a circle
  16. Fill with apricot jam
  17. Close by pressing the dough together with your fingertips to form a little bag
  18. Repeat with the rest
  19. Add butter to a clean round pan
  20. Brush until covered
  21. Transfer shaped dough to round pan
  22. Brush with butter
  23. Place in a cold oven
  24. Bake - 25 min, 170°C
  25. Remove from oven
  26. Dust with icing sugar
  27. Serve warm
