Bazlama is a very fluffy and light Turkish quick flatbread. It is also very easy to make because the soft yeast dough already provides the fluffiness. You don’t need an oven as the flatbreads are baked in the frying pan. Bazlama is also similar to Indian naan bread, but as I said, it is a bit fluffier and airier. You can enjoy it sweet or savoury for breakfast. Quickie breads great for breakfast. You can also prepare the dough the night before (with half the amount of yeast), refrigerate, covered, overnight and bake the breads the next morning, so you have the perfect Sunday bread or rolls. Step preview

  1. Attach the Dough Tool
  2. Add fresh yeast, water and sugar to the Cooking Chef XL Bowl
  3. Stir with tablespoon until dissolved
  4. Add spelt flour, baking powder, egg, milk, olive oil and salt to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Knead with splashguard fitted - 10 min, Speed 1
  7. Remove the dough from the Cooking Chef XL bowl
  8. Lightly grease the Cooking Chef XL bowl
  9. Return the dough to the Cooking Chef XL bowl
  10. Remove the Dough Tool
  11. Prove with splashguard fitted until doubled in size - 1 hr, 30°C, Speed OFF
  12. Transfer dough to lightly floured surface
  13. Divide into pieces
  14. Roll into balls
  15. Cover with kitchen towel
  16. Let rest - 20 min
  17. Remove the kitchen towel from the dough
  18. Roll out into an oval shape until 1/8" (5mm) thick
  19. Heat a clean frying pan - medium-high heat
  20. Transfer shaped dough to frying pan one by one
  21. Cook each side then turn over - approx 3 min
  22. Serve
