I got this recipe for Bosnian pitta bread from my friend Lejla and her mum. The dough consists of just flour and water. It will be rolled out near paper-thin and then, using your fingertips, stretched on a large piece of cloth. This variant is filled with beef mince. Spices give the pitta breads a special flavour. You replace the dried sage with Winter Savoury. What’s more, pitta bread can be batch-made, prebaked and frozen. During Ramadan, it’s ideal for iftar (to break the daily fast).
