I got this recipe for Bosnian pitta bread from my friend Lejla and her mum. The dough consists of just flour and water. It will be rolled out near paper-thin and then, using your fingertips, stretched on a large piece of cloth. This variant is filled with beef mince. Spices give the pitta breads a special flavour. You replace the dried sage with Winter Savoury. What’s more, pitta bread can be batch-made, prebaked and frozen. During Ramadan, it’s ideal for iftar (to break the daily fast).   1. Attach the Dough Tool
  2. Add all purpose flour and water to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Knead with splashguard fitted until smooth - 6 min, Speed 1
  5. Remove the bowl from the machine
  6. Cover with kitchen towel
  7. Let rest - 30 min
  8. Add ground beef, onion, salt, black pepper, water, marjoram and dried sage to a clean large mixing bowl
  9. Mix until well combined then set aside
  10. Pre-heat oven - 200°C
  11. Grease a clean round pan then set aside
  12. Transfer dough to lightly floured surface
  13. Divide into 3 equal pieces
  14. Shape into balls
  15. Roll out one piece
  16. Brush with sunflower oil
  17. Let rest - 5 min
  18. Place the dough onto a large tablecloth
  19. Stretch out the dough with your hands until really thin
  20. Cut the circle in half and spread a sixth of the filling on each half
  21. Raising one edge of the tablecloth, allow the dough to roll towards the middle
  22. Repeat on the other side to form two long rolls
  23. Repeat with the rest
  24. Twist one roll into a spiral shape
  25. Transfer shaped dough to round pan
  26. Repeat with the rest and place each spiral shape next to each other
  27. Bake until light golden - 50 min, 200°C
  28. Remove from oven then set aside
  29. Add double cream and chili flakes to a clean medium bowl
  30. Mix until combined
  31. Serve
