A super easy recipe to start with the CCE. Whip your egg whites slowly and for a long time. It should take 7 to 10 minutes to get whites that hold. The smaller and more numerous the bubbles, the better the whites will hold, so take your time and beat at medium speed before speeding up only at the end. For best results, use a packet of mini pink wafers from Reims, and for the chocolate, you can use some chopped up white chocolate buttons, or make some shavings by grating a white chocolate bar on a cheese grater. Step preview

  1. Add kirsch and blackcurrant liqueur to a clean rectangular tart pan
  2. Mix with tablespoon
  3. Attach the Whisk
  4. Add egg white and salt to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Whisk - 3 min, Speed 2
  7. Whisk - 3 min, Speed 3
  8. Add caster sugar to the Cooking Chef XL Bowl while machine is running
  9. Whisk - 2 min, Speed 5
  10. Whisk - 2 min, Speed Max
  11. Transfer content of Cooking Chef XL Bowl to large mixing bowl then set aside
  12. Clean Cooking Chef bowl
  13. Attach the Whisk
  14. Add mascarpone cheese, egg yolk and caster sugar to the Cooking Chef XL Bowl
  15. Whisk - 2 min, Speed 4
  16. Transfer one quarter of content of large mixing bowl to Cooking Chef XL Bowl
  17. Stir gently with tablespoon until well combined
  18. Repeat 3 times until all the egg whites have been used
  19. Assembling the cake
  20. Dip the underside of the wafer biscuits in the blackcurrant/Kirsch mixture
  21. Transfer half the wafer cookies to a clean gratin dish
  22. Transfer half of cream to gratin dish
  23. Scatter half the raspberries in the gratin dish
  24. Sprinkle with icing sugar
  25. Add the rest of the soaked wafer biscuits
  26. Spread the remaining cream
  27. Scatter the other half of the raspberries
  28. Scatter white chocolate over the gratin dish
  29. Sprinkle with some icing sugar
  30. Chill in fridge until set - 3 hr
  31. Serve
