A super easy recipe to start with the CCE. Whip your egg whites slowly and for a long time. It should take 7 to 10 minutes to get whites that hold. The smaller and more numerous the bubbles, the better the whites will hold, so take your time and beat at medium speed before speeding up only at the end. For best results, use a packet of mini pink wafers from Reims, and for the chocolate, you can use some chopped up white chocolate buttons, or make some shavings by grating a white chocolate bar on a cheese grater.
