A rich white bean stew cooked slowly with smoked paprika, chorizo, morcilla, panceta and saffron. You can also add a ham bone to the broth to give extra flavour if you wish- remove this before serving. Use dried faba beans or dried judión beans, soaked overnight- draining and rinsing them before you begin this recipe. The meat ingredients are cooked whole, then sliced at the end of cooking and served on-top of the bean stew.

Step preview

  1. Add fava beans and water to a clean large glass bowl
  2. Soak - 12 hr
  3. Drain
  4. Rinse with water
  5. Drain
  6. Transfer beans to Cooking Chef XL Bowl
  7. Attach the Stir Tool and Stir Assist Clip
  8. Add onion, garlic clove, water and smoked paprika to the Cooking Chef XL Bowl
  9. Lift the Cooking Chef head and fit the heat shield
  10. Cook with splashguard fitted until softened - 12 min, 110°C, Stir 4
  11. When it comes to the boil, skim the foam from the top of the broth and discard
  12. Add asturian black pudding, asturian chorizo and smoked pancetta to the Cooking Chef XL Bowl
  13. Cook with splashguard fitted until soft - 2 hr 30 min, 98°C, Speed OFF
  14. Remove the chorizo, black pudding and pancetta from the bowl
  15. Transfer to a cutting board and cut into chunks
  16. Set aside until ready to serve
  17. Add sea salt to the Cooking Chef XL Bowl
  18. Mix with splashguard fitted until combined - 30 sec, Stir 1
  19. Dilute the saffron in a little bit of cooking broth
  20. Add saffron to the Cooking Chef XL Bowl
  21. Cook with splashguard fitted until cooked through - 15 min, 98°C, Speed OFF
  22. Serve
