Step preview

  1. Pre-heat oven - 200°C
  2. Line a clean tart tin with shortcrust pastry
  3. Prick the base of the pastry with a fork
  4. Chill in fridge - 15 min
  5. Remove from fridge
  6. Line with parchment paper
  7. Fill the pastry with baking beans
  8. Bake - 10 min, 200°C
  9. Remove the baking beans from the pastry
  10. Bake until light golden - 5 min, 200°C
  11. Remove from oven and let cool
  12. Attach the Stir Tool
  13. Add oil to the Cooking Chef XL Bowl
  14. Lift the Cooking Chef head and fit the heat shield
  15. Heat with splashguard fitted until hot - 1 min, 130°C, Stir 1
  16. Then add smoked lardons to the Cooking Chef XL Bowl
  17. Cook with splashguard fitted until browned - 4 min, 130°C, Stir 1
  18. Line a clean plate with paper towels
  19. Transfer content of Cooking Chef XL Bowl to plate
  20. Clean Cooking Chef bowl
  21. Attach the Creaming Beater
  22. Add gruyère cheese, crème fraîche, whipping cream, egg yolk, salt, black pepper and egg to the Cooking Chef XL Bowl
  23. Mix until combined - 2 min, Speed 1
  24. Transfer cheese mixture to jug then set aside
  25. Reduce - 170°C
  26. Sprinkle the fried lardons over the base of the tart
  27. Sprinkle with gruyère cheese
  28. Pour half of cheese mixture into tart tin
  29. Pull the oven shelf out halfway and carefully place the tart tin on the shelf
  30. Pour the rest of cheese mixture into tart tin
  31. Carefully slide back the oven shelf
  32. Bake until just set and let cool - 25 min, 170°C
  33. Serve
