Comforting and delicious, you can’t beat a home-made cinnamon sugar pretzel served warm from the oven. Dipping the shaped dough in a hot water bath with bicarbonate of soda gives the pretzel that chewy outer crust, whilst the saltwater glaze added during the bake gives that sweet and savoury combination which makes them so moreish.

Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Attach the Dough Tool
  3. Add all purpose flour, dried yeast, sugar, lard and salt to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Mix with splashguard fitted until combined - 30 sec, Speed Min
  6. Add milk to the Cooking Chef XL Bowl gradually while machine is running
  7. Mix with splashguard fitted until dough forms - 6 min, Speed Min
  8. Remove the bowl from the machine
  9. Cover with kitchen towel
  10. Prove - 1 hr
  11. Transfer dough to lightly floured surface
  12. Bring the edges of the dough into the centre, turn the dough over
  13. Shape into a ball
  14. Cover with kitchen towel
  15. Let rest - 10 min
  16. Divide into 8 equal pieces
  17. Roll into a log
  18. Form each log into a ‘U’ shape
  19. Cross the open ends over each other to form a twist
  20. Bring the twisted end down over the bottom of the ‘U’ shape
  21. Press to seal to make a pretzel shape
  22. Repeat the process with the remaining dough
  23. Transfer pretzels to baking tray
  24. Cover with a damp tea towel
  25. Prove - 30 min
  26. Pre-heat oven - 220°C
  27. Add water and salt to a clean small bowl then set aside
  28. Add water and baking soda to a clean large saucepan
  29. Heat until boiling - high heat
  30. Reduce the heat to medium-high
  31. Dip pretzels into boiling water one by one
  32. Flip over to the other side for 10 seconds
  33. Remove from the saucepan and drain
  34. Place pretzels on baking tray
  35. Brush the dough with some of the salt water mixture
  36. Bake until crispy - 15 min, 220°C
  37. Remove from oven and let cool - 10 min
  38. Add caster sugar and ground cinnamon to a clean large mixing bowl
  39. Stir until combined
  40. Retrieve the cooled pretzels
  41. Brush with unsalted butter
  42. Roll pretzels in sugar mixture immediately
  43. Serve
