Step preview

  1. Line a clean baking tray with parchment paper
  2. Attach K Beater
  3. Add unsalted butter, lemon, granulated sugar, egg, lemon juice, all purpose flour, baking powder and salt to the Kenwood bowl
  4. Mix with splashguard fitted until combined then scrape bowl - 3 min, Speed 2
  5. Mix with splashguard fitted until well combined - 1 min, Speed 2
  6. Roll into balls
  7. Transfer dough balls to baking tray
  8. Chill in fridge - 1 hr
  9. Pre-heat oven - 190°C
  10. Remove the chilled dough balls from the fridge
  11. Roll in icing sugar
  12. Place the coated dough balls on the baking tray
  13. Bake until set - 10 min, 190°C
  14. Remove from oven and let cool
  15. Serve
