Step preview

  1. Attach Spiral Dough Tool
  2. Add water, all purpose flour, salt and unsalted butter to the Kenwood Bowl
  3. Mix with splashguard fitted - 5 min, Speed 2
  4. Transfer dough to work surface
  5. Form into a ball
  6. Wrap with plastic wrap
  7. Place in fridge - 30 min
  8. Cover work surface with a piece of parchment paper
  9. Add unsalted butter to the work surface
  10. Place another piece of parchment paper on top
  11. Using a rolling pin, gently flatten the butter into a rectangular shape, approx. 15 x 10 cm
  12. Retrieve dough from fridge and place on a lightly floured surface
  13. Roll out
  14. Unwrap butter and place in the centre of the rolled-out dough
  15. Fold the edges of the pastry over to enclose the butter fully
  16. Tightly pinch the seams
  17. Roll out until 1/8" (5mm) thick
  18. Fold the bottom edge up to the centre and fold the top down to cover the first fold
  19. Brush off any excess flour with a pastry brush
  20. Turn the dough by 45 ° and immediately repeat the rolling and folding action
  21. Wrap with plastic wrap
  22. Chill in fridge - 30 min
  23. Repeat the process 2 more times (6 folds in total)
  24. Roll out into a rectangle until 2mm thick
  25. Cut into strips
  26. Add cheddar cheese, parmesan cheese, fresh chives and mustard to a clean medium bowl
  27. Mix until combined
  28. Transfer half of shaped dough to baking tray
  29. Add around 1 Tbsp of filling to each piece and spread along the length
  30. Place another strip on top and press down
  31. Twist the pieces
  32. Use your fingers to seal the ends
  33. Place in fridge - 15 min
  34. Pre-heat oven - 200°C
  35. Retrieve the chilled pastry from the fridge
  36. Bake until golden brown - 25 min, 200°C
  37. Remove and let cool
  38. Serve
