Step preview

  1. Grease a clean loaf pan
  2. Add fennel seeds, dried cilantro, anise seeds and caraway seeds to the Mini Chopper attachment
  3. Attach the Mini Chopper attachment to the machine
  4. Blend until fine crumbs form
  5. Remove the attachment from the machine
  6. Attach the Dough Tool
  7. Add bread flour, salt, dried yeast, olive oil and water to the Cooking Chef XL Bowl
  8. Add one tablespoon of the bread spice into the Cooking Chef Bowl
  9. Lift the Cooking Chef head and fit the heat shield
  10. Mix with splashguard fitted until combined - 2 min, Speed 1
  11. Mix with splashguard fitted until dough forms - 8 min, Speed 2
  12. Remove the bowl from the machine
  13. Cover with kitchen towel
  14. Prove - 1 hr
  15. Transfer dough to lightly floured surface
  16. Gently pull the edges into the centre
  17. Roll the dough over and make it into a loaf shape
  18. Clean Cooking Chef bowl
  19. Transfer shaped dough to Cooking Chef XL Bowl
  20. Remove the Dough Tool
  21. Prove with splashguard fitted - 1 hr, 30°C, Speed OFF
  22. Pre-heat oven - 220°C
  23. Place a small oven proof container filled with boiling water to the bottom of the oven
  24. Transfer dough to loaf pan
  25. Sprinkle 1 teaspoon of the bread spice over the top
  26. Bake until hollow-sounding when tapped - 25 min, 220°C
  27. Remove from oven and let cool
  28. Serve
